Could you please expand on the Point "1"? What issue you are facing and would you be able to provide the steps to reproduce the issue?
2) Hide Empty fields only hides the "Non-editable" empty fields. It does not hide the fields which could be edited by users.
3) We would look into this.

There is an option in the Latest Bridge 2021, where you can toggle the usage of "CMD/CTRL" for Labels & Ratings.
It is present in the bottom right corner "Use CMD for Labels & Ratings".

Preferences -> Advanced : International.
