Also seeing this problem in Bridge 2020. Sometimes a .mov file will flag as unable to change/set XMP metadata. Purging the Cache for the file(s) flagging the error enables the metadata for them to be displayed and interacted with again. I have scaled down testing to interact with 7 .mov files between 200MB - 800MB each [ @PECoutejoie : "do not process files larger than" is set to 1000MB but have also set this to 2000MB and noticed no change in behaviour ]
